Outside Temp: 54 F (I thought that it might rain, but nothing came of it.. perhaps a few sprinkles, but nothing to write home about!)
What I cooked today:
Mexican Quiche: I needed to make something with all the eggs we have, so I have this quiche. Unfortunately, the kids don't really like it. Oh well, at least I made something.
Update:
The problem with having a schedule during the week, is that on Saturday, your body still wakes up the normal time... Which saw me open my eyes and look at the clock at about 6:42am, wondering what was wrong with me. Ugh, I've been tired all day, and I'm blaming my early eye opening time. Of course, I did close them again, and sleep for another hour or two, but still...
Once all the kids were up, I requested that they assist me in cleaning up some of the house... not all of it, but some. Amazingly, they didn't really complain and we did get the computer area of the house cleaned and vacuumed, along with the dishes and some laundry. I have a lot of laundry, so I didn't expect to get through all of it, but I did accomplish about 5 loads, so I can't complain. Perhaps tomorrow, I can get through more of it. Of course, by then, I'll have more laundry added to the pile. I hate laundry.
Grandma was making some new beans for dinner, so we all headed up there after church to chat and have dinner. I love it when someone else (always Grandma) makes dinner, because it means I don't have to! They even spoiled us with ice cream for dessert!

Outside Temp: 34 F (it finally stopped snowing today... which means that the snow melted and the grass is green again. I love how the weather changes so quickly!)
What I cooked today:
Mini Quiches: Turned out terrible. I will never again try to make quiche in my mini muffin pan. I tried two recipes; one is a Mexican quiche that I used to make for Sunday brunch. But, I didn't have all the ingredients anyway, and it turned out terrible. So, I tried another recipe. It called for a piece of bread at the bottom, then onions and cheese, then eggs and milk. They weren't as terrible, but they sure weren't great. I ended up having leftover pizza for breakfast!
Burgers and Pasta: I know, I know, the old standby. Somehow, it got to be 7:30, and I hadn't thought about food yet. So, I went with something quick and easy. I think I'll start thinking about dinner around noon tomorrow, just so something gets made!
Update:
By the time we woke up this morning, the snow had already started melting. Patrick and I are getting ourselves psyched up to slaughter the two Cornish chickens tomorrow. He's sharpened the ax and everything. I'm still not sure how I'm going to handle this, but I'm going to try to be brave and stoic. Of course, I'm sure some screaming will occur. But, I'll hopefully be able to laugh about it later.
We spent a few hours cleaning up the house today. It's been a while since we did a full blown cleaning session (which, in our house, means about 2 hours of cleaning. I know, we're totally spoiled). I did get about 5 loads of laundry done, the kitchen was swept and counters were scrubbed. And the carpet was vacuumed (even under the couches). I still need to attack the bedrooms, but I did get all the kids to help, so I couldn't push them too hard (okay, yes, I could have, but I didn't want to clean anymore).
So, with the addition of Patrick's and my new computers, we currently have 5 computers that work pretty well (and 2 that work okay and 2 XBoxes). Which means that Patrick and I can both be working, Connor can write his story, Katie can look at YouTube videos, Allen can play MineCraft (or Robolox or whatever he's playing these days) and Ryan can play XBox games. So, for about 2 hours today, no one complained or argued or whined or begged or anything. Ahhh, I think we have found a nice balance of technological advancement.
The best part was that after about 2 hours, the kids all ended up outside playing in the yard with 'swords' and shields. They played 'cops and robbers' and 'knights' and other games that involved running around and playing with each other. I admit I was a little concerned that if we gave them the option, they would spend all day inside, playing computer games. It's nice to know that they choose to go outside and play instead of being inside all day!
We discussed our plans for the summer tonight. We are going to start scouting out hiking trails up in the Highwoods, tourist traps in Virginia City, camping trips down to Yellowstone and fishing, out our back gate. We have a little less than 3 full months left, so it comes down to about 11 weeks. I'm sure we can have an awesome summer in 11 weeks!

Outside Temp: 47 F (it got as high as 64 F today! Woo Hoo)
What I cooked today:
Goulash: I was going to make spaghetti sauce, but I got sidetracked and forgot until about 3, then I realized I wouldn't have enough time to do it justice in the crock pot. Maybe tomorrow. It didn't matter, since the goulash worked out fine.
Update:
What a beautiful day! Patrick took Ryan with him and Grandpa to town and the dump (woo hoo! My garbage is finally gone.. for about a day or two). Ryan's teacher called and her daughter is sick, so he didn't have to go to school today. So, Grandpa thought he'd like a day in town with the men.
Woo Hoo! That meant that I had a whole day by myself, with no one to take care of! So, what did I do? Cleaning. Lots and lots of cleaning. A little lame, I know, but it's so much easier to do when there is no one around messing it up.
I opened all the windows (finally removing the last of the plastic over the windows. I may regret that move when we get a cold snap in about 2 weeks), and let all the crisp spring air into the house. Then, I started in my master bathroom. Actually, it's our only bathroom, since the second bath doesn't work, so it's been closed off for the last few months. Yes, all 6 of us sharing one bathroom. And it does get a little cleaned every once in a while, but since I usually ask the kids to clean, it hasn't been really cleaned in a while. I scrubbed the counters, the floors and the mirrors. Ahh, a nice clean bathroom.
Then, I moved on to my bedroom. I hadn't done a thorough cleaning since we got the chicks (I know, only a week ago, but it wasn't really clean when we brought them in), so I got under the bed and the dressers and dusted everything. By the time I moved on to Ryan's room, I was on a roll. And boy, does that kid have too many toys with way too many little pieces.
I also scrubbed the kitchen table and (sort-of) cleaned off our desks. A little more vacuuming, and I was done for the day. I still have to attack the kitchen, family room, and the other kids rooms, but I feel really accomplished. I also managed to get about 4 loads of laundry done, and an extra 4 loads of clean laundry (that has been sitting on the couch for the last few days) folded and put away.
At some point during my frantic cleaning routine, I had to sit back and laugh at myself. I was screeching along with the radio (Guns and Roses or Skid Row or Lady Gaga, take your pick) and realized that the windows were open. Uhhh, I pray that my neighbors were all at work (yes, all 2 of them). But the singing along (albeit, badly singing) made it go faster, so I just kept going.
Of course, as soon as the kids got home, Katie asked to change the radio to Taylor Swift, so I had her put on earphones and my cleaning frenzy was finished. Apparently, I can only clean while listening to 80's hair bands!
